AMW Cooks: Japchae

 

So you all know by now I am not a professional cook or chef!  I just love the idea of cooking healthy adn delicious food for the family and I try to make many types of variations and different types of dishes because I want them to really like eating homecooked meals rather than order out!  

I was recently craving for Japchae and I found my cupboard to have glass noodles (I usually have these types of noodles for soups!)  For some reason my ingredients for Japchae are almost complete - I finally bought fresh spinach and I have mushrooms so I made it a go!

Who would’ve thought I made this dish 2x a week as it won the hearts not only of my husband but also my in-laws?

Here’s how I cook my JapChae.



Ingredients:

  • Korean sweet potato starch noodles
  • Pork/Chicken/Beef (I cooked chicken on the side as main dish)
  • 1 carrot
  • Baby Spinach 
  • Bell Peppers
  • Shiitake Mushrooms
  • Sesame Oil
  • Sesame Seeds
  • Soy Sauce
  • Mirin
  • Black Pepper
  • 1tsp sugar
  • 1 large egg to top the dish at the end before serving

Steps:

1. Cook the meat separately by marinating it with soy sauce and other spices.  Pan fry them on low to medium fire.

2. Boil glass noodles and set aside to cool.

3. Cook each vegetable separately by stir frying them.  As for spinach, blanch them on boiling water and cool with running water.

4. Add the Soy Sauce, Mirin, and the rest of the ingredients on a large pot and pour the noodles .

5. Season with sesame oil and sesame seeds. 

6. Fry egg separately and transfer on top of Japchae noodles after and serve!


That easy!  And you get yummy noodles for the whole family!  Filling, delicious and healthy!

Steamed Baguio Pechay Rolls Recipe

 

Dear AMW Friends,

It is Sunday...I always think more about food on weekends.  I’m not sure why, though I tend to rest more when it comes to cooking on weekends but I guess Sunday especially reminded me so much of family gatherings (Pre-COVID days) and we usually get together and bond over food.

After wanting to try Baguio Pechay Rolls for so long, I finally decided to go with it with a “Bahala Na” attitude.  I worry mostly for the fact that I can make a mistake and I’m feeding not just myself but a family of 5!  

My husband, my son and my neighbor in-laws!  They are very picky with the food they eat so I have to make sure I don’t go crazy with my trial and errors especially since I only have an hour to whip out this dish.

But I managed....I actually felt proud of this dish that’s why I’ve decided to share this recipe.


Ingredients:

  • Pechay Wombok (can be cabbage)
  • Ground Pork
  • Light Soy Sauce
  • Oyster Sauce
  • Liquid Seasoning
  • Salt
  • Pepper
  • Sugar
  • Onion and Garlic
  • Spring Onions/Leeks
  • Ginger
  • Cornstarch
  • Mushrooms

Easy Banana Cake Recipe

 


Easy banana cake

Hi friends.

I have loads of bananas at home, all thanks to my mom who always supply us with a good amount of banana that could last us a week! 

Since a lot are getting too ripe to eat, I’ve decided to create an easy-to-bake banana recipe because I’d do the work to get into my cravings! 

This is a non-pro version a first for me to make my own banana cake which won the hearts of my family!

AMW Cooks: Potato Pancake Recipe

 

Hi AMW Friends!

How’s home cooking?  I have been experimenting more on simple ingredients at home!  One of my favorite ingredient - Potatoes!  

If you like to create an easy Potato Pancake recipe, you may purchase instant  mix from Korean stores!  To be honest?  It does not taste different from the ones made from scratch (Flour+Potato Starch+spices).  So yes, you don’t need to spend extra but just look into your kitchen pantry and create this easy recipe great for adults and kids alike.

You may add your own favorite ingredients like Bacon, vegetables or even seafood!  The options are endless!

AMW Cooks: Korean Bibimbap



I love Bibimbap!  This rice dish is always present whenever I'm in a Korean Restaurant.

Because I have never left the house since March 2020, I've decided to "cook everything I craved for".  Well, I try to and I took time in creating this because I knew this dish is simple yet tedious.  Tedious in a sense that I have to chop the veggies and cook them one at a time.  

I know, not a huge deal but when you don't have househelp at home and you have a kid that wanted your full attention 24/7 - you know this is a challenge.  But a challenge I'm glad I accepted because we had the best Bibimbap meal for the past 6 months!  Yes - we haven't had this for so long!

Korean Bibimbap recipe

Ingredients:
  • Carrots
  • Spinach
  • Mushrooms
  • Rice 
  • Sesame Oil
  • Kimchi
  • Gochujiang Paste
  • Salt and Pepper to taste
  • Eggs
To pair this wonderful rice dish, I used a pressure cooking in creating Pork Stew.  I don't have beef at home so Pork is good enough.

Korean Pancake Recipe (Pajeon)



Ever since lockdown, you will find me scrolling on Youtube or Instagram food pages to search for meals I can create for my family!  Of course, it has to do with my cravings as well!

Ever since I watched Maangchi's videos, one simple recipe she made that really stuck in my head is her Pajeon Recipe (or Korean Pancakes).  She explained how every Korean household will make this simple recipe during festivals and how this reminds her of her mom who prepares this every morning for breakfast!

I can imagine how important this meal was because I have warm, fuzzy feelings in my tummy whenever I cook recipes that my mom makes.  

The only ingredient I don't have are well, more seafood and Potato Starch.  Thankfully, I was able to order Potato Starch online (at Landers Superstore) and went ahead with just a simple fresh shrimps as the main ingredient.




Ingredients:  Just so you know, I tweaked the recipe of Maangchi and used ingredients that I have at home and created a taste apt for my family's tastebuds.

  1. Chopped Shrimps
  2. Green Onions
  3. Crabsticks
  4. 1/2 cup Flour
  5. 1/2 cup Potato Starch
  6. 2 Eggs
  7. Salt
  8. Pepper
  9. Garlic Powder
  10. Knorr seasoning

If you don't have Potato Starch, you can use cornstarch to replace (but lessen it, let's say a quarter cup only) and add water.

AMW Cooks: Buttermilk Fried Chicken


I love Buttermilk Fried Chicken!  I always order them not only for myself but for Kyle who loves any food that has a "crunch" to it.  I have mastered the art of frying since college years so I have done several fried chicken dishes!  
One type of chicken dish I haven't tried?  BUTTERMILK version.  Since I tend to sleep very late at night (aka 4:00am - not healthy!)  I was busy researching on Buttermilk recipes and since I don't have buttermilk, I've decided to research how to make my own buttermilk.  It wasn't hard, thanks to "Google-A-Friend", it is just a combination of Full Cream Milk (or you can use cream) with Lemon or Pure Vinegar.  

That's where this recipe was born!  I think this could go much better if I store this in the fridge to marinate overnight but I only marinated this for 2 hours!  But trust me when I say, the chicken is super tender, juicy and flavorful!

AMW Cooks: Skinless Pork Longganisa (For First Timers!)

Ever since lockdown started.  My cravings for anything I don't have at home magnified gazillion times!  I was on my phone at wee hours of the night, watching food videos, craving and wanting to eat dishes that I don't really crave for pre-lockdown.

It must be stress, it must be panic, I don't know what it was but I knew in my heart I want to EAT LONGGANISA!

I am not being overly dramatic but the place were I live is strict so I can't seem to go out, the only person who has quarantine pass is #yayaTab and I don't want to risk and go out as well because, well, you'll understand if you are a mom!

So anyways, back to my cravings, it was perfect timing that my sis messaged me telling me how much she appreciated the Skinless Longganisa she did at home.

"YOU MADE YOUR OWN LONGGANISA?"  --- I exclaimed.
And she asked me to look through online videos and guess what?  It was indeed easy to make!  I wasn't expecting "commercial longganisa" result but it was good enough to satisfy my cravings.

Okay, I'm trying to be humble, let's just say the 30 mini pcs I made?  ALL GONE in less than 2 days!  (kind of bragging now! :P)

Anyways, sharing this recipe to you and I just want to inspire you to create your own healthier alternative (because NO PRESERVATIVES) and you know exactly what's inside these tiny cuties!

AMW Cooks: Shrimp, Mushrooms and Pork Siomai Recipe



Another recipe that I wouldn't think I could do in my entire "self-proclaimed" chef years!

I received a nice box from my sister who made her own Pork Siomai and I knew from my heart that I can only buy them or receive as gift from my sister who is a super good cook!

Obviously, because for so many reasons that lockdown made me a hungry monster all of a sudden, I finally had time to read through ingredients list from various cookbooks and online Food Blogs and I finally mustered the courage to create my own version of Siomai recipe with the least amount of ground pork (kasi mauubusan na kami that time!)  

I figured I would like to add more mushrooms and shrimps and it was so hard to wrap because of the "watery" consistency of those 2 ingredients, but hey!  With patience, I was able to create my own Siomai recipe my whole family loves!


My parents-in-law are picky eaters and I got thumbs up from them!  That is enough for me to want to create more dishes that I thought I couldn't make but was able to survive making!

Jollibee Burger Steak-Like recipe


Obviously, I am just calling your attention with the Jollibee Burger steak name but it is close to Jollibee burger steak I swear!  It doesn't look the same but the taste is there!  I will practice more until I get closer to it, even sa looks!

Pork Giniling with Boiled Eggs Recipe




I've done this dish several times but for the past months, I forgot about this dish due to busy schedule.  With Enhanced Community Quarantine, I find myself worrying about the next dish to cook as I don't have as much ingredients as those days I can freely walk and shop at the supermarket!

Now here's a quick story, as I opened our refrigerator, I saw a container of "giniling" or ground pork  and I let out a huge sigh.  What more can I do with giniling aside from Meatballs and use it to combine with veggies (which I don't have at that time?)

Thankfully, I immediately thought of my mom and this recipe popped in my mind!

This dish dates back to when I was still in Gradeschool (obviously masyadong matagal na yan!) This dish is cooked by my mom once or twice a month because she usually cooks meat with veggies (hay, you know how moms are on healthy eating! :P)

So when this dish is served, naku, I have a HUGE smile on my face and eat as fast as ... ehm.. FLASH!

And today, I am sharing my mom's recipe to YOU!  Simple, quick and easy to make!  Only a few ingredients and you're ready to make someone's tummy happy!


Ingredients:

  • Onion 
  • Garlic
  • Ground Pork
  • Soy sauce
  • Oyster Sauce
  • Salt
  • Pepper
  • Boiled eggs

AMW Cooks: Chicken Katsu Curry Recipe


Curry can be cooked in so many ways!
The usual way, Filipino style is with "Gata" or coconut's milk.  Since not everyone in the family likes coconut milk, I've decided to create Japanese Style curry with Chicken Katsu as the main meat!

It was a winner!  Kyle loved the crunch and I love CURRY in general!

AMW Cooks: Seafood Bihon Recipe



I usually dislike to cook noodles because they always ended up "Dry" and I don't like noodles that are parched!

Finally learned the trick to boil the noodles in Chicken Stock and cook the sauce and pour it once the sauce is "semi-cool" so the noodles won't absorb the sauce as much anymore, this trick WORKS!


Ingredients: 1. Bihon Noodles (small Pack) 2. Seafood pack (bought from Supermarket) 3. Chopped Onion and Garlic 4. Oyster Sauce 5. Soy Sauce 6. Cornstarch Slurry 7. Cabbage

AMW Cooks: Stir-Fry Pork and Mushrooms Recipe



This recipe is super quick and easy to do!  Best if you leave the marinated meat for 15-30 minutes but you can go ahead and cook it even without waiting if you're in a rush! 

This is my go-to dish if you want your meat super smooth and tender...you'll know the secret ingredient to make this meat tender if you watch this video!  Comment below if you saw the trick I learned from my mom!

Seaking's Calamari Sticks Recipe



I love to order Calamari whenever we dine in an American Restaurant.  As much as we love the "crunch", the order is always "bitin" and we always wanted MORE!

As much as I love cooking, I'm always in a rush and will always prepare meals that are 30 minutes less!  With the work I do, the cooking in between MUST be easy, fun to do and the most important thing of all? DELICIOUS!

So whenever I shop for my weekly menu plan, I always have something in the fridge that is easy-to-do!  Just like the Seaking Calamari Sticks.

Now let's start preparing Crunchy Calamari Sticks in 30 minutes time - or less!

Ingredients:

  • Seaking Calamari Sticks
  • 1 Egg
  • Bread Crumbs
  • All-Purpose Flour
  • Garlic Powder
  • Salt and Pepper 
  • Optional: Mayonnaise as dressing


Step 1:
Throw in Seaking Calamari Sticks in a bowl and add in All-Purpose Flour.  For 1 pack, I used approximately 4-5 tablespoons.

Seaking Pink Salmon Steak Recipe



I seldom cook Salmon dishes for so many reasons, one of them would be: "How assured am I that they are clean and fresh?"

Then I've found a solution when I saw Salmon Steak "cut" available in packs from the supermarket --- Seaking Pink Salmon Steak!



I originally wanted to bake this but I've decided to create a sweet version of Salmon Steak so that my son will love it too!

Here's what you need:

  • Seaking Pink Salmon Steak 
  • Salt and Pepper
  • Extra-Virgin Olive Oil
  • Butter
  • Honey
  • Fresh garlic
  • Lemon (or in my case, I wanted the local flavor from Calamansi

Midweek Special: Graham Sylvanas Recipe




I am not a "sweets" person, the list of my favorite desserts are less than my 10 fingers and none of them are the super sweet ones!

One dessert me and my brother loved to share are Sylvanas.  We would "gift" each other 2-3pcs of Sylvanas way back when we were still students because we are "on a budget".  You know how pricey these little piece of heaven could get.

Fast forward to today, as I am starting to be back with my "cooking grind" (Hello Kyle Nash on 1st Grade!), my food planning and preparation skills went "topnotch"!  - in my dictionary anyways.  So when I got myself some M.Y. San Grahams goodies, I quickly planned for a Mango Graham Cake because I LOVE mangoes!  Unfortunately, ripe mangoes aren't in season so I went for Graham Sylvanas as this is one of my few favorite desserts!  I didn't pick this at first because feeling ko ang hirap gawin!

Hindi naman pala!
