Potato, Egg and Bacon Casserole Recipe




I cook every single day, not unless I need to work until late at night, I usually have something prepared for dinner because I grew up with my mom's home-cooked meals, I understand how it feels to come home from work, and enjoy meals prepared from the heart!

Mr. AMW asked me to call for food delivery service because he knew I had a tiring week, I was actually leaning to that option so I didn't have any meat defrosted which I do every afternoon.

It was a last minute idea when I looked inside the fridge thinking what to do with only eggs and potatoes.  I had this great idea in mind but I ran out of milk and cheese!  

Then I looked into our dining table and saw a package from Anchor which was sitting there for a good 2 days!  It was a huge EUREKA moment when I saw everything I needed in a basket!   So I finally made this!




Ingredients:
  • 6-7 full eggs
  • 3-4 potatoes
  • Bacon
  • Chopped onions and garlic
  • Cheddar cheese
  • Butter
  • Full cream milk
  • Salt and pepper
  • Mushrooms (optional)

Yes guys, didn't know Anchor now has Shreded Cheddar Cheese and Full Cream Milk in tetra packs




Slice potatoes thinly


Fry bacon and chop them into small pieces  Chop onions and garlic even mushrooms (it was a last-minute decision for me to add mushrooms that why they are not on photo)

This dish is actually very flexible in terms of ingredients, you can add any ingredients you want, you can change bacon to Ham if you want something less fattening.


In a bowl, whisk 6-7 eggs adding full cream milk in between.


You may add salt and pepper at this point!

In a pan, saute garlic, onion and chopped mushrooms using Anchor Butter.


Pour the ingredients on the egg + milk mixture, add shredded cheddar cheese.  This is such a happy moment for me that I don't need to grate my cheese! (Busy mom hack!)

Add half of the cooked bacon bits and set the half aside.


Grease baking pan with olive oil .


Pour in half of the mixture and layer the thin potatoes evenly.  This portion is fun Kyle is starting to help me out (or messing up! hahaha)


Cover the potatoes with remaining ingredients, top it with shredded Cheddar Cheese.


Use a spatula to make sure everything is coated evenly.


Bake in preheated oven for 30 minutes max.  Mine was only 20 minutes because my casserole isn't thick. 

Once everything is cooked, pour in the remaining bacon bits on top and cook for another 5 minutes.


Let it sit for around 5-10 minutes to cook down before you start slicing.  Serve and enjoy!
this is also a great breakfast meal!  The family loved it and it was gone in less than an hour!  I will definitely do this dish again with healthier alternatives --- chopped brocoli maybe?




This is one easy-peasy recipe that was successful in first try!

  1. My mom saw this and she's itching to tey this though I tought why not add some bell peppers (my mom agreed)
