I was holding 3 bouquet of Cauliflowers and I don't know what to do with them! I mean they are delicious right? But I wanted to reinvent cauliflower since my sister-in-law will be dining here and she's not a fan of this vegetable.
I know it seems tedious but the taste is totally worth it! I searched for ingredients in the kitchen and decided to come up with "Cheesy and Corny" Cauliflower Fritters (pun intended). And it was a huge success!!!
On the side is something healthier, Tinolang Manok (Chicken soup with green papaya and Chili leaves).
Ingredients:
- Cauliflower (boiled and chopped)
- Bacon bits
- Grated quick-melt cheese.
- Corn bits
- All-Purpose-Flour
- Salt and Pepper
- 1 egg
First, you have to boil the Cauliflower in a pot of water until they are soft (but not mushy)
Once cool, chop cauliflower into smaller pieces as shown on photo below.
On the side, gently "Fry" the chopped bacon with its' own fat.
Combine Corn, fried bacon, chopped cauliflower, all-purpose-flour and egg. Mix together until everything is combined really well. Add in salt and pepper for seasoning.
To make the "sticky" and melting texture, add in grated quick-melt cheese. Again mix everything together until consistency is a bit thicker and stickier.
Use a spoon and gently create a "burger pattie shape". Let one side cook and flip to the other side.
Yummy! No one noticed cauliflower was the main ingredient of this dish!
Best way to make your kids eat vegetable.
Now, using the "cauliflower soup" earlier, I used it for my Tinolang Manok! You get all the healthy ingredients in this soup!

DeleteI love cauliflower and I will try this. Although I might omit the corn. Corn in fritters seem weird for me. My face kitchen hack is tuna and tofu fritter. It's kind of weird but I love it in my sandwich or as a viand in a pinch.
