AMW Cooks: Chicken Curry




Hi AMW friends!
One of my easy-to-do and feel-good recipe is Chicken Curry!  When I have the energy, I usually fry the meat (either pork or chicken) and separate the curry sauce.  On days I am too tired to do the extra work, I'd just dump a chicken together with the vegetables and curry sauce and just let it sit for a couple of hours for the flavors to seep in. 

For today's AMW Cooks recipe, it's my easy-peasy Chicken Curry.


Ingredients:

  • Oil
  • Onions
  • Potatoes
  • Carrots
  • Chicken (chopped)
  • Curry powder or cubes
  • Salt and pepper to taste
  • Cornstarch slurry (if needed)
Side story, ask me my favorite meat, my answer will always be Chicken!  Unfortunately, I do get allergic reactions to certain chicken so I am very particular with the brand of chicken that I purchase!  I usually go for fresh ones from the market but on most days when I need meat inside my freezer for back-ups, I go for Magnolia Chicken.  I usually purchase the free-range ones (Breasts and thighs are my favorite) but if I want to stock up on chicken meat, I'd go for the Whole Chicken to retain freshness and have them chopped the night before I plan to cook them!  That's why I'm so grateful when I was sent Whole Chicken from the brand that I personally buy and love!  Thanks Magnolia Chicken Philippines!

1. Saute Onions and semi-cook potatoes and carrots.  I like to do this separately rather than dumping all the vegetables into the curry sauce because I wanted the vegetables to have a particular "crunch".



2. Using a separate pan, sear chopped chicken until brown on the exterior.


3. Boil water and add curry cubes or powder.  You may purchase them at Japanese stores or use the powdered versions from supermarket.


4. Once the curry sauce boils, pour in chicken and vegetables and let it cook.



5. Boil until sauce lessen and thickens.  You may pour in cornstarch slurry for thicker consistency, add salt and pepper to taste!

You may add coconut milk but my family likes the Japanese curry version!
