AMW Cooks: Orange Chicken Recipe

 


Hi AMW Friends!  I tried Orange Chicken at North Park recently and I got really inspired to recreate this dish since nasarapan kaming lahat (we enjoyed the dish) including my 8-year old son!  The best way to add up Vitamin C to his diet!  

Keep in mind this is the simplest recipe I tried with ingredients I have readily in the kitchen!  After creating this dish, there’s one thing I will change —- the source of Orange!  The orange I got aren’t as sour or orange-y in taste, so maybe….just maybe, I should try using Boxed Orange Juices?  What do you think?

Ingredients:

Addendum: it’s grate Garlic Not Ginger ✌🏻

  • 1kg chicken fillet
  • 1 cup All Purpose Flour
  • 1/2 cup cornstarch
  • 4-6 gloves garlic 
  • 6tbsp Soy Sauce
  • 1 egg
  • 1 tbsp Salt
  • 1/2 cup water

Sauce:
  • 4 oranges
  • Butter
  • 1tbsp Oyster Sauce
  • 4-5 tbsp Brown Sugar

AMW Cooks: Chicken Rice Bowl Recipe (Hainanese Chicken)

 


I used to dislike “White Chicken” as what we call it in Cantonese Language.  I am definitely NOT discriminating Chicken based from their color but it is a directly translation from Cantonese language (which we highly use at home).

I guess I am really turning into an “Auntie”.  For someone who says: “EEEWWW” when I see my mom mix ginger and garlic in oil to put it on chicken and look at me today!  ADDING MORE GINGER than how my mom used to do!  

Ultimate Auntie you say?  It’s okay, I find this one of the most comforting food especially these trying times.  Cooking every single day (except no cook days) for the past years is putting a toll in my mental health!  :P  Just joking, it did not affect my mental health but thinking about what to cook every single day adds up to my stress.  Thank God for modern times, thank GOD for internet inspirations!  I actually was inspired with this dish via ...... *drumroll* TIKTOK!  

YES, I learn so much on Tiktok that is why I love that app more than Instagram nowadays.

“Don’t tell Instagram, it might get jealous!” NAHHH!  :P

AMW Cooks: Buttermilk Fried Chicken


I love Buttermilk Fried Chicken!  I always order them not only for myself but for Kyle who loves any food that has a "crunch" to it.  I have mastered the art of frying since college years so I have done several fried chicken dishes!  
One type of chicken dish I haven't tried?  BUTTERMILK version.  Since I tend to sleep very late at night (aka 4:00am - not healthy!)  I was busy researching on Buttermilk recipes and since I don't have buttermilk, I've decided to research how to make my own buttermilk.  It wasn't hard, thanks to "Google-A-Friend", it is just a combination of Full Cream Milk (or you can use cream) with Lemon or Pure Vinegar.  

That's where this recipe was born!  I think this could go much better if I store this in the fridge to marinate overnight but I only marinated this for 2 hours!  But trust me when I say, the chicken is super tender, juicy and flavorful!

AMW Cooks: Chicken Katsu Curry Recipe


Curry can be cooked in so many ways!
The usual way, Filipino style is with "Gata" or coconut's milk.  Since not everyone in the family likes coconut milk, I've decided to create Japanese Style curry with Chicken Katsu as the main meat!

It was a winner!  Kyle loved the crunch and I love CURRY in general!

Chicken Fajitas Recipe (Part 2)



Hi AMW friends!
Remember my first Chicken Fajitas recipe which my family loved so much?  My sister-in-law even said it tastes better than those from restaurants!  (Either true or niloloko lang niya ako) ahhaha.

So I did another version this time tweaking the ingredients a bit.  And so far, it was another success!  I know as it was wiped out!  No leftovers the next day!


Ingredients are almost the same as my first recipe but instead of mushrooms, I used Fresh Tomatoes and used Chicken Thigh still as they are more tender.

AMW Cooks: Chicken Curry




Hi AMW friends!
One of my easy-to-do and feel-good recipe is Chicken Curry!  When I have the energy, I usually fry the meat (either pork or chicken) and separate the curry sauce.  On days I am too tired to do the extra work, I'd just dump a chicken together with the vegetables and curry sauce and just let it sit for a couple of hours for the flavors to seep in. 

For today's AMW Cooks recipe, it's my easy-peasy Chicken Curry.


Ingredients:

  • Oil
  • Onions
  • Potatoes
  • Carrots
  • Chicken (chopped)
  • Curry powder or cubes
  • Salt and pepper to taste
  • Cornstarch slurry (if needed)
Side story, ask me my favorite meat, my answer will always be Chicken!  Unfortunately, I do get allergic reactions to certain chicken so I am very particular with the brand of chicken that I purchase!  I usually go for fresh ones from the market but on most days when I need meat inside my freezer for back-ups, I go for Magnolia Chicken.  I usually purchase the free-range ones (Breasts and thighs are my favorite) but if I want to stock up on chicken meat, I'd go for the Whole Chicken to retain freshness and have them chopped the night before I plan to cook them!  That's why I'm so grateful when I was sent Whole Chicken from the brand that I personally buy and love!  Thanks Magnolia Chicken Philippines!

Chicken Fajitas Recipe


The best way to show your mom how much you love and appreciate her is to cook for her (if you are into cooking).  One thing I didn't do so much for my mom is to cook for her!  Because I grew up having her or my sister cook for us #luckyme

But after turning into a mom myself, I realized I need to use my knowledge in cooking and share it to my own family!  (May talent din pala ako sa cooking guys!)

I am definitely not a "Chef-kind-of-girl" but I am definitely a cook that can whip up easy-yet-warm-to-the-tummy dishes!  Everything I cook takes less than 45 minutes because I'm always in a rush!  I recently shared my Chicken Fajitas recipe on Instagram Stories and I was overwhelmed with the request I get to share this simple recipe!

Pardon the photos because I only use cellphone camera, who in the world can hold a DSLR camera while cooking?  (If you can --- I salute you!)

Chicken Fajitas ala AMW

Ingredients:

  • Boneless Chicken Thighs or breasts
  • Old El Paso Fajitas (bought at Robinsons Supermarket)
  • Large Onion
  • 1 Large Green or Red Bell Pepper (both are better so your dish is more colorful)
  • Salt, pepper 
  • Mushrooms (optional
For sauce:
  • Cream Cheese
  • Sour cream
  • Milk
  • Powder Garlic
  • Broth from the Chicken

Corn and Chicken Recipe (Main Dish)



You know how we always associate "corn" as a side dish!  Would you believe I grew up with "corn" as part of our main dish?  And I was seriously excited for it? 

This is inspired by my mom's recipe!  I lack carrots but nevertheless, it tastes just as amazing...tastes just like my mom's "straight-to-the-tummy-and-heart" meals!

Ingredients:
  • Corn in can (Jolly)
  • Chicken breasts cut in cubes
  • Oyster sauce
  • Soy sauce
  • Salt and Pepper
  • Cornstarch slurry or a tablespoon of butter
  • Sugar or Teriyaki Sauce
  • Garlic and onion

Super simple to do, you can cook this in less than 5 minutes if all the ingredients are prepared!

  • Sauteed garlic and onions.
  • Brown the chicken cubes.
  • Once chicken cubes are brown and cooked, pour in canned corn.  
  • Stir for a minute or 2 and add water.
  • Add in soy sauce, oyster sauce and teriyaki sauce (or sugar) mixture. 
  • Add salt and pepper to taste.
  • Once you are happy with the taste, pour in cornstarch slurry to thicken the sauce.  In my case, I prefer to add a tablespoon of butter to "thicken" the sauce.  Tastes even better!
So far, Mr. AMW enjoyed the dish and asked for more!

I highly recommend to add shrimps for this dish for more flavor but I'm allergic to shrimps so I settle for chicken.

AMW Cooks: Creamy Chicken with Broccoli

Hey AMW Friends!
Another AMW recipe!  You know what I realized?  My love for cream-based dish!  I'm glad Mr. AMW feels the same so it isn't difficult to feed him!  Well, we technically love the same types of food so I don't have to worry about what to cook for him!  As long as their delicious --  he's A-Okay!

So recently made Creamy Chicken with Brocoli dish!  As much as I would love to call this dish "Chicken Pastel", well, it isn't! Maybe, inspired by it!  When I think about Chicken Pastel, I am always reminded by the yummy Chicken Pastel from the caterer Verleo ---> who loves them too?

So this is my version, very simple and easy to do!

AMW Cooks: "Flat" Chicken Cordon Bleu (My Style)

A "flat" Chicken Cordon Bleu?  What's that?  
Well, whenever you dine in a restaurant and order Chicken Cordon Bleu, you know it'll always be round when it comes out of the kitchen!  Because this is an "AMW Cooks" portion and sometimes, we just have to be practical, why don't we just make it flat?  I mean, there are days I have time to roll them but there are days...I just want to be quick because the Hubby will be home anytime soon!  

And guess what?  FLAT...

or rolled....they both taste the same!  Both deliciously good according to my judge! :) The Chicken Cordon Bleu expert!  Yup, they don't look professional but they taste professional daw! :P

And why do I call this MY STYLE?  Well, most Chicken Cordon Bleu dish recipes use ham while I use my hubby's favorite --- Bacon!  And...instead of the usual white wine sauce, I opted for simple home-cooked gravy because that's just the way we like to pair our fried chicken, with gravy!

AMW Cooks: Crunchy Chicken Wrap

Happy Sunday AMW friends!
I hope you don't mind me posting more about recipes rather than restaurants!  Like I said over the past blog posts, I haven't been dining out much since Baby AMW turned into a Toddler AMW!  Fellow moms out there would totally understand right?  I mean seriously, how can you decently take photos of your food when you have a toddler walking around waiting for accidents to happen?  I'm singing "Can't Take My Eyes Off You" at the moment, dedicated to Kyle!

So back to this week's recipe!  Mr. AMW loves wraps!  Anything you put inside a wrap...hotdogs (eeww), corned beef (eeew), socks (double ewww! Just joking!)  Just to prove a point that he loves wrap, I chanced upon a wrap called Mission Wrap at Robinsons Supermarket and I immediately called his attention and he said YES right away without blinking!  Truth be told, I'm really lazy to do wraps as I think they aren't "full meal" and yet, you take a whole lot of effort to make it!  Think about Bibimbap!  

For the love of my hubby, well..actually, Hubby made this for me and I just assisted! hahahah  

Here's our version of Crunchy Chicken Wrap and it is easy to make!


Ingredients ---
  • Chicken breasts
  • Lettuce
  • Tomatoes
  • Pepper
  • Salt
  • Garlic
  • Bread crumbs
  • Egg
  • Wraps
