Easy Hainanese with Scallion Oil Chicken Recipe

 


The Scallion Oil is the best thing that happened with the existence of spring onions! I can eat this with all my steamed dishes and noodle dishes! Ang sarap niya! 

That said, I am very happy to share my quicker version of Hainanese Chicken. Quicker kasi usually mas madaming steps pa! 

(P.S. don’t substitute Canola Oil with other oils, Canola Oil does not harden even if stored in fridge!) 


Ingredients:

Chicken

  • Fresh chicken (whole or chopped)
  • Salt
  • Water
  • Ginger Slices
  • Garlic 
  • Sesame Oil
  • Leeks
  • Peppercorn
Scallion Oil
  • Spring Onions
  • Canola Oil
  • Salt


Here’s the quick video I did to show you how to cook this yummy dish perfect for the family.

Method:

  1. Rub chicken skin with rock salt.
  2. Boil Water and add leeks, salt, ginger slices, garlic and peppercorn.  Add sesame oil.
  3. Once water starts boiling, put in chicken.  Set the fire in medium setting once the water continues to boil and cover chicken and cook for around 20-30 minutes depending on the size of your chicken.
  4. Separately in bowl, add chopped spring onions, add Canola Oil and salt.  Mix everything and cook in hot pan for around 4 minutes and serve with the boiled chicken.  
  5. You may top the Scallion oil on cooked chicken and serve with rice.

Taiwanese Chicken and Egg Fried Rice Recipe

 

Our last out of country trip before the Pandemic was Taipei, Taiwan and the husband and I just scrolled our travel photos and missed all our food trip and bonding on the streets of Taiwan.  One of our favorite?  And Kyle’s?  Taiwanese Chicken Cutlet!  They mostly use Chicken Breasts for since our family love the tender and juiciness of chicken thighs, I opted for Chicken Thigh because we always have a stock of that in our freezer.  


This recipe was surprisingly a success! I used a kilo of Chicken Thigh Fillet (from @landersph ) and here are the rest of the ingredients, feel free to adjust:

Chicken marinade: 
• 1 tbsp minced garlic
• 1 tsp. White pepper
• 1 tbsp Oyster Sauce
• 2 tbsp Soy sauce
• 1 -1.5 tsp Five Spice Powder
• a dash of sugar

Before frying: 
• 1 egg 
• 3 tbsp cornstarch 
• tapioca starch for coating 

Egg Fried Rice:
• 3-4 eggs
• spring onions or leeks
• old rice
• salt and whte pepper
• a dash of sugar
• 1 tsp soy sauce

SPAM® Burrito Recipe

 








Ingredients:

For Burrito

● 1 can SPAM®, sliced into strips

● 4 tortilla wraps 8’’

● 2 cups cooked rice

● 4 pcs chopped garlic

● 2 pcs tomato

● 1⁄2 pc white onion

● 4 pcs egg

For the sauce

● 1 cup sour cream

● 1 bunch spring onions


Directions

1. Heat oil in a pan, and fry strips of SPAM® Luncheon Meat.  Set aside.

2. In a separate pan, fry the chopped garlic, add the rice, and season with salt.

3. Chop the tomato. Chop the white onion. Mix together and season with salt.

4. In a separate pan, scramble the egg, season with salt, and fry.

5. Chop the spring onions and mix with the sour cream.

6. Heat the tortilla wrap in pan (or you may bake in oven after assembling.  

7. Assemple garlic rice, tomato and onion, and SPAM®. Drizzle with a spoon of the sauce, and wrap into a burrito. 

8. Cut in half, and serve with sauce on the side.

Maki Mi Recipe

 

Hi AMW Friends!

There are so many dishes I missed ever since the lockdown but thankfully, my quest for those dishes made me expand my cooking skills!  

These are just some of the dishes I never tried cooking in the past but all thanks to my neighbor for sending me some and told me it isn’t hard to make Maki Mi on your own! 

So here’s my 2nd try!  The first time, it was a success but I wanted to make sure it is restaurant-like quality and it passed my family’s taste!  My husband even exclaimed this taste exactly the same as the famous Maki Restaurant in the Metro.


Ingredients:

  • Pork Kasim (diced and pounded)
  • Cassava Starch (I Specifically used AA Powder for this)
  • Soy Sauce
  • Dark Soy
  • Minced Garlic
  • Pork Cube (Ex. Knorr)
  • Sesame Oil
  • Cooking Wine
  • 1 egg
  • White pepper
  • Spring Onions
  • Egg Noodles

AMW Cooks: Calamari

 Hi AMW Friends!

I haven’t been sharing much recipes here on my blog on a Sunday so I am now wide awake, after a good cup of coffee, to share to you a recipe my family loves!  A recipe you order on restaurants that seems to be expensive and you get only a few amount.  Now, let’s go for full-blast plate-ful of Calamari!  (P.S. there are more, I only did a few for plating!)

Before you go saying HOW PERFECT for squid rings are, I purchased the squid rings on supermarket pre-packed and clean!  For a very busy person, I don’t have time to clean up seafood so I’d rather purchase them!  Most of the time, they taste weird or rubbery, thankfully, this one I purchased at Zagana Supermarket (Via Grabmart) earned 2 thumbs up from me.

Ingredients:
  • Squid Rings
  • to marinate squid: Milk
  • All-purpose flour
  • Garlic Powder
  • Onion Powder
  • Salt
  • Pepper
  • Bread crumbs
  • Egg
  • For dipping: mayonnaise, chives, salt, pepper, onion, lemon/lime/calamansi

Okonomiyaki Recipe

 

Hi everyone.

When I posted this on Instagram stories, a lot of my followers requested for a detailed recipe on this!  So here I am, finally ready to share this Simple Okonomiyaki recipe you can re-create at home!

All the while, I thought making Okonomiyaki is hard, it is just a bit hassle in prep’ing the ingredients but overall, it was fairly easy!  It would be easier if you purchase Okonomiyaki Flour available at Japanese stores or Landers and you don’t have to worry about seasoning these.


Ingredients:
1/2 cup flour 1/3 cup potato starch (Or you may opt to buy Okonomiyaki powder, that’s easier) Cabbage sliced thinly Shrimps peeled/ calamari bits Salt and pepper 1-2 eggs Okonomiyaki sauce Japanese mayo Bonito flakes

Easy Recipes from Kimbap to Shrimp Dumplings!



Over the week, I have been busy creating some "complicated-looking" dishes that are quite easy to make!  Blame it on my cravings!  I have been having cravings for both Dumplings and Kimbap so I've decided to make one myself since I have no leads on the best ones online!  

And guess what?  I ended up making 60pcs of Dumplings (not bad for a first-timer) and 8 rolls of Kimbap!  

I am extremely happy with my dumplings but I've decided to re-do my Kimbap using ingredients that are more flavorful (like Spam instead of Korean ham).  Take note, it's all in the preference, there's no right or wrong ingredients to put inside your Kimbap!

AMW Cooks: Korean Bibimbap



I love Bibimbap!  This rice dish is always present whenever I'm in a Korean Restaurant.

Because I have never left the house since March 2020, I've decided to "cook everything I craved for".  Well, I try to and I took time in creating this because I knew this dish is simple yet tedious.  Tedious in a sense that I have to chop the veggies and cook them one at a time.  

I know, not a huge deal but when you don't have househelp at home and you have a kid that wanted your full attention 24/7 - you know this is a challenge.  But a challenge I'm glad I accepted because we had the best Bibimbap meal for the past 6 months!  Yes - we haven't had this for so long!

Korean Bibimbap recipe

Ingredients:
  • Carrots
  • Spinach
  • Mushrooms
  • Rice 
  • Sesame Oil
  • Kimchi
  • Gochujiang Paste
  • Salt and Pepper to taste
  • Eggs
To pair this wonderful rice dish, I used a pressure cooking in creating Pork Stew.  I don't have beef at home so Pork is good enough.

Korean Pancake Recipe (Pajeon)



Ever since lockdown, you will find me scrolling on Youtube or Instagram food pages to search for meals I can create for my family!  Of course, it has to do with my cravings as well!

Ever since I watched Maangchi's videos, one simple recipe she made that really stuck in my head is her Pajeon Recipe (or Korean Pancakes).  She explained how every Korean household will make this simple recipe during festivals and how this reminds her of her mom who prepares this every morning for breakfast!

I can imagine how important this meal was because I have warm, fuzzy feelings in my tummy whenever I cook recipes that my mom makes.  

The only ingredient I don't have are well, more seafood and Potato Starch.  Thankfully, I was able to order Potato Starch online (at Landers Superstore) and went ahead with just a simple fresh shrimps as the main ingredient.




Ingredients:  Just so you know, I tweaked the recipe of Maangchi and used ingredients that I have at home and created a taste apt for my family's tastebuds.

  1. Chopped Shrimps
  2. Green Onions
  3. Crabsticks
  4. 1/2 cup Flour
  5. 1/2 cup Potato Starch
  6. 2 Eggs
  7. Salt
  8. Pepper
  9. Garlic Powder
  10. Knorr seasoning

Do you like it? 
Will you cook the same pancake for your family? 
If you don't have Potato Starch, you can use cornstarch to replace (but lessen it, let's say a quarter cup only) and add water.

AMW Cooks: Buttermilk Fried Chicken


I love Buttermilk Fried Chicken!  I always order them not only for myself but for Kyle who loves any food that has a "crunch" to it.  I have mastered the art of frying since college years so I have done several fried chicken dishes!  
One type of chicken dish I haven't tried?  BUTTERMILK version.  Since I tend to sleep very late at night (aka 4:00am - not healthy!)  I was busy researching on Buttermilk recipes and since I don't have buttermilk, I've decided to research how to make my own buttermilk.  It wasn't hard, thanks to "Google-A-Friend", it is just a combination of Full Cream Milk (or you can use cream) with Lemon or Pure Vinegar.  

That's where this recipe was born!  I think this could go much better if I store this in the fridge to marinate overnight but I only marinated this for 2 hours!  But trust me when I say, the chicken is super tender, juicy and flavorful!

AMW Cooks: Skinless Pork Longganisa (For First Timers!)

Ever since lockdown started.  My cravings for anything I don't have at home magnified gazillion times!  I was on my phone at wee hours of the night, watching food videos, craving and wanting to eat dishes that I don't really crave for pre-lockdown.

It must be stress, it must be panic, I don't know what it was but I knew in my heart I want to EAT LONGGANISA!

I am not being overly dramatic but the place were I live is strict so I can't seem to go out, the only person who has quarantine pass is #yayaTab and I don't want to risk and go out as well because, well, you'll understand if you are a mom!

So anyways, back to my cravings, it was perfect timing that my sis messaged me telling me how much she appreciated the Skinless Longganisa she did at home.

"YOU MADE YOUR OWN LONGGANISA?"  --- I exclaimed.
And she asked me to look through online videos and guess what?  It was indeed easy to make!  I wasn't expecting "commercial longganisa" result but it was good enough to satisfy my cravings.

Okay, I'm trying to be humble, let's just say the 30 mini pcs I made?  ALL GONE in less than 2 days!  (kind of bragging now! :P)

Anyways, sharing this recipe to you and I just want to inspire you to create your own healthier alternative (because NO PRESERVATIVES) and you know exactly what's inside these tiny cuties!

AMW Cooks: Shrimp, Mushrooms and Pork Siomai Recipe



Another recipe that I wouldn't think I could do in my entire "self-proclaimed" chef years!

I received a nice box from my sister who made her own Pork Siomai and I knew from my heart that I can only buy them or receive as gift from my sister who is a super good cook!

Obviously, because for so many reasons that lockdown made me a hungry monster all of a sudden, I finally had time to read through ingredients list from various cookbooks and online Food Blogs and I finally mustered the courage to create my own version of Siomai recipe with the least amount of ground pork (kasi mauubusan na kami that time!)  

I figured I would like to add more mushrooms and shrimps and it was so hard to wrap because of the "watery" consistency of those 2 ingredients, but hey!  With patience, I was able to create my own Siomai recipe my whole family loves!


My parents-in-law are picky eaters and I got thumbs up from them!  That is enough for me to want to create more dishes that I thought I couldn't make but was able to survive making!

Jollibee Burger Steak-Like recipe


Obviously, I am just calling your attention with the Jollibee Burger steak name but it is close to Jollibee burger steak I swear!  It doesn't look the same but the taste is there!  I will practice more until I get closer to it, even sa looks!
