AMW Cooks: Skinless Pork Longganisa (For First Timers!)

Ever since lockdown started.  My cravings for anything I don't have at home magnified gazillion times!  I was on my phone at wee hours of the night, watching food videos, craving and wanting to eat dishes that I don't really crave for pre-lockdown.

It must be stress, it must be panic, I don't know what it was but I knew in my heart I want to EAT LONGGANISA!

I am not being overly dramatic but the place were I live is strict so I can't seem to go out, the only person who has quarantine pass is #yayaTab and I don't want to risk and go out as well because, well, you'll understand if you are a mom!

So anyways, back to my cravings, it was perfect timing that my sis messaged me telling me how much she appreciated the Skinless Longganisa she did at home.

"YOU MADE YOUR OWN LONGGANISA?"  --- I exclaimed.
And she asked me to look through online videos and guess what?  It was indeed easy to make!  I wasn't expecting "commercial longganisa" result but it was good enough to satisfy my cravings.

Okay, I'm trying to be humble, let's just say the 30 mini pcs I made?  ALL GONE in less than 2 days!  (kind of bragging now! :P)

Anyways, sharing this recipe to you and I just want to inspire you to create your own healthier alternative (because NO PRESERVATIVES) and you know exactly what's inside these tiny cuties!

Pork Giniling with Boiled Eggs Recipe




I've done this dish several times but for the past months, I forgot about this dish due to busy schedule.  With Enhanced Community Quarantine, I find myself worrying about the next dish to cook as I don't have as much ingredients as those days I can freely walk and shop at the supermarket!

Now here's a quick story, as I opened our refrigerator, I saw a container of "giniling" or ground pork  and I let out a huge sigh.  What more can I do with giniling aside from Meatballs and use it to combine with veggies (which I don't have at that time?)

Thankfully, I immediately thought of my mom and this recipe popped in my mind!

This dish dates back to when I was still in Gradeschool (obviously masyadong matagal na yan!) This dish is cooked by my mom once or twice a month because she usually cooks meat with veggies (hay, you know how moms are on healthy eating! :P)

So when this dish is served, naku, I have a HUGE smile on my face and eat as fast as ... ehm.. FLASH!

And today, I am sharing my mom's recipe to YOU!  Simple, quick and easy to make!  Only a few ingredients and you're ready to make someone's tummy happy!


Ingredients:

  • Onion 
  • Garlic
  • Ground Pork
  • Soy sauce
  • Oyster Sauce
  • Salt
  • Pepper
  • Boiled eggs





Feel free to watch this quick 1 minute video to know how to create this simple dish!  I swear, you can cook this in 10 minutes less!  (Tip: Boil the eggs while you are cooking this dish to save time!)

Creamy Mushroom Pork Chop Recipe



So I posted this recipe on AMW IG Stories and a lot of you asked me about the ingredients and how to do this dish.  Well, this is very simple, simpler if you have Pressure cooker, but if you don't have, don't worry, you just need to boil the meat beforehand or cook this longer to make sure it'll turn out tender.

Braised Tofu with Minced Pork and Shrimp Recipe


You all know I love my tofu, I cook Tofu dishes at least once a week and I've found the best Firm Tofu in grocery stores!  It's a Korean brand and so far, I've only purchased 1 out of 50 sour ones!  You all know sour tofu are boo-boo unless you are eating Stinky Tofu!

This is the exact brand with price lifted from Honestbee website via Robinsons Sueprmarket.



So here's my simple recipe but made a great impact to the family becaues of the fresh shrimps added!
Ready to know how to cook this simple dish?


Ingredients:
  • Firm Tofu
  • Ground Pork
  • Fresh shrimps cooked and peeled.  
  • Shrimp water (the water used to cook the shrimps)
  • Soy sauce
  • Hoisin Sauce
  • Onion and garlic
  • Pepper
  • Cornstarch slurry
  • Optional: Enoki Mushrooms
Steps:
  • Cook shrimps for 3 minutes max.  Lift the shrimps and peel them off saving the shrimp water.
  • On a separate pan, saute garlic and onions and add ground pork.
  • Add enoki mushrooms.
  • Pour soy sauce, hoisin sauce, pepper to taste and stir well, add a bowl of "shrimp water" (the one you used to cook the shrimps).
  • This is the time to taste everything and it is okay if it is a bit salty as you will add in shrimps and tofu later on.  The reason for adding Firm Tofu on the latter part is for them not to break from all the stirring.  As for shrimps, best to eat shrimps cooked just right, overcooked will lead to dry and hard-to-chew shrimps.
  • Once you're happy with the sauce, add cornstarch slurry, turn off heat and pour cooked shrimps and sliced firm tofu.
Voila!  You're done with the restaurant-tasting Braised Tofu with Minced Pork and Shrimps!

AMW Cooks: Pork Tonkatsu




Hey AMW friends who loves to cook as much as I do!
I finally made it!  A Pork Tonkatsu that tastes legit!  *ahem* approved by the AMW family of course!  (either it is truly yummy or they are just being nice!)  

But here's the FINAL result! :P  Nothing fancy, nothing restaurant-looking, but definitely a tummy-filling warm-to-the-heart-and-soul dish!  (daming sinabi!:P)


Ingredients:

  • Pork Chops 
  • Salt
  • Pepper
  • All Purpose Flour
  • Eggs
  • Panko or Bread crumbs
for sauce:
  • Ketchup
  • Worcestershire sauce
  • Oyster sauce
  • Brown Sugar
  • Pepper
  • Sesame seeds/oil
  • Cornstarch and water (to create slurry)

AMW Cooks: Stuffed Tofu




I've always been wanting to try Stuffed Tofu dish because I love ordering them in Chinese restaurants!  It was just recently that I've decided to give it a go because I was extremely craving for it!  


Here's my version, far from the usual Stuffed Tofu you see in Chinese restaurants but hey, it won my family's heart...and stomach!




Ingredients:
For stuffing

  • Ground Pork
  • Onion and Garlic
  • Carrots
  • Salt and Pepper to taste
  • Cornstarch
  • Egg
  • Knorr Seasoning (1 teaspoon)
  • Chopped shrimps (optional)
Tofu


  • Firm Tofu
  • Cornstarch to "dry up"
  • Breadcrumbs (optional)

AMW Cooks: Tofu Steak




I have shared to the world so many times my love for TOFU dishes.  I love them so much I wanted to recreate my favorite Tofu Steak in Chinese restaurants so many times and it was last week that I finally made it right!


Ingredients:

  • Firm tofu sliced in cubes.
  • Break crumbs
  • All Purpose Flour
  • Egg
  • Ground Pork
  • Green Bell Pepper
  • Onion and garlic.
  • Salt and Pepper
  • Soy sauce
  • Oyster Sauce

  • Cornstarch slurry

Chinese-Style Braised Tofu with Ground Pork Recipe




So who loves Tofu?  ME!
Yes, I didn't wait for your answer because I am really a fan of tofu!  So once I get the chance to grab Firm Tofu from the grocery over the weekend, I knew I had to treat the family with my simple yet yummy Chinese-Style Braised Tofu with Ground Pork dish!

Ingredients:
  • Firm Tofu sliced into blocks
  • Ground Pork
  • Garlic, finely minced
  • Fresh Ginger (grated)
  • Oyster Sauce
  • Soy Sauce
  • Hoisin Sauce
  • Cornstarch slurry
  • Water
  • Salt and Pepper to taste
  • Green bell pepper 
  • Optional: Green Onions
Heat off the walk and fry the tofu.  Make sure the tofu does not have excess water, you may either press a paper napkin on each tofu to reduce moisture.  Brown both side and set aside.

Fluffy Sweet and Sour Pork Recipe



I shared my first Sweet and Sour Recipe last year and today, I'll be sharing my 2nd version!  I believe sweet and sour recipes (no matter how many times you cook it) won't taste exactly the same each time!  That's the beauty of cooking!  

So today, I'm sharing a unique way of making your Sweet and Sour Pork Dishes!  I made it fluffier better looking for kids who like meals that look good!

AMW Cooks: When Potatoes Seem Boring For You


Forgive me for the title, I just can't seem to name my "potato" dishes anymore as I cooked so many potato dishes for the past months!  Don't get me wrong, I am not trying to turn my family into Potatoes but it's just that, we love potatoes and we have loads of them back home and I need to cook them all in various ways!  It doesn't hurt that toddler Kyle loves potatoes so much so this momma will do anything to make her son happy!

Happy Toddler= Happy Mommy = Happy Daddy! 

The dish turned out really well especially the sauce!  It was just an invention and the family loved it so much now I'm wondering if I can re-do the sauce! :P  Any fellow cooks out there have the same problem?

AMW Cooks: Egg Wrapped Minced Pork with Potatoes

Happy Sunday AMW Friends!  If you follow me on Instagram, you'll know that I'm having a grand time with AMW family having our first Staycation at Discovery Suites Ortigas!  I've been wanting to do this for so long but I've always been tied up on weekends!  Almost EVERY weekend!  So yes, I'm taking advantage for this first FREE weekend after months!  So I'm definitely NOT bringing my laptop because I want to enjoy the moment with Mr. AMW and Kyle Nash!  

Not bringing laptop means, I will be typing this post early!  Am I good or am I good? :D  If you know I'm on Staycation, you've probably seen one of my many #AMWCooks posts, 160+ to be exact I am quite amazed!  I've received emails from fellow mommies requesting for this particular recipe I've posted 6 weeks ago!  

It looks blah, but it tastes really good and can make any leftover dishes look appealing!  But it wasn't a leftover dish though but just for future reference!  You and I are allowed to do so!

AMW Cooks: Sweet and Sour Pork



I am still on a natural "high" from my fun workshop with The Body Shop!  It was the first ever collaboration between me and The Body Shop and it was a huge success!  All thanks to The Body Shop Philippines Team and the attendees for making this such a success!  I can't wait for more "legs" of #TBSWorkshops coming soon!

AMW Cooks: Pork Salpicao

Last week, because of my extremely busy schedule, I didn't get to go to the supermarket for our monthly grocery!  So what's left in the fridge?  A big blob of pork loin which I ordered from the lady here in the area!  As much as I was tempted to do Pork Chop or any fried dishes, I decided to go for something healthier.

  • Pork tenderloin chopped in cubes.
  • Chopped garlic
  • Butter
  • Salt and Pepper
  • Liquid Seasoning
  • Oyster Sauce
  • Button Mushrooms sliced in very thin slices.

AMW Cooks: Tofu Burger



You know how much I love Tofu right?
As much as I would love to cook them everyday!  Well, I can't!  One issue I have with "supermarket Tofu" is that most of them tastes so sour you can't literally eat them!  If I want good, quality, tofu, I had to go to downtown Manila to grab one and no, I had no time for that!

So last week, since I was at an event at Rockwell, I grabbed a chance to shop at Rustans Supermarket in between meetings!  I found a pack of Tofu with Korean writing!  And it was an ultimate EUREKA moment because the Tofu tastes WONDERFUL!  I'm sorry I didn't get the chance to take a photo on the brand name but I will definitely do so because I will go back for more!

Inspired by the newly bought tofu, I originally thought of making Ma Po tofu but I planned to prepare this dish also for Kyle, I opted for something visually appetizing minus the spicy taste!  

I'm not sure if you guys know "Pipa Tofu", I planned to do Pipa tofu but the extra step of "steaming" before pan-frying is too much for a busy mom with clingy son!  So I went straight ahead to pan-fried Tofu Burger!  The result?  YUMMY, HEALTHY GOODNESS!

AMW Cooks: Breaded Pork Chop with a Twist

You know when your husband specifically requested for "Chicken Cordon Bleu" but you don't have any chicken breasts at home?

Well, as I sneaked into my fridge, I spied almost a kilo of pork loin so I sliced into into small "Pork Chops" size, grabbed some bacon and potatoes.  YES POTATOES!

Ingredients:
  • Pork loin sliced thinly.
  • Bacon
  • 1 large potato (grated)
  • Bread Crumbs
  • Salt and pepper to taste
  • Egg
  • Garlic

AMW Cooks: Hashed Corned Beef Pattie

Have you encountered a "Eureka!" Kitchen moment then you realized you don't have enough ingredients to be experimental and brave?

Well, it was exactly that moment earlier this week when I plan to do something nice for the family!  Then when I looked into the fridge, I only have 1/4 of a ground pork left with a couple of pieces of potatoes!  What should I do?

I made breakfast for dinner!  I even posted this photo on Instagram and have followers guess on the list of ingredients!  It was actually a fun guessing game because it may look like just a regular Corned Beef with Potatoes but there's more to what is visible to the naked eye!  hahaha!  Are you realy for the list of ingredients?

  • Diced Potatoes
  • 1 can of Corned Beef (I used PureFoods)
  • 1/4 ground pork
  • Onion
  • Sliced mushrooms
  • Salt, pepper and soy sauce to taste

AMW Cooks: Bacon Wrapped Burger

My husband loves Bacon!  Who doesn't?
Well, he love Bacon --- a lot!  I don't!  But as a loving wife *ahem* #TrueStory  I make sure to cook him dishes that would wow him visually, emotionally and mentally!

As I have limited ingredients left on the fridge, I was thinking: "Burger again?"   It was almost weekend and I want to surprise the hubby!  Eureka moment --- a pack of Bacon! 

What to do?  I planned on chopping the bacon and combine it with the burger pattie, but I wanted something visually appealing! 

So I made these!  Who would've thought fellow-Bacon lovers were suddenly requesting for recipes?  It is very easy I tell you!

P.S. Sorry there's no step-by-step photos because my hands are extremely dirty!


Ingredients:
  • Ground pork/beef.  I used ground pork.
  • Salt, pepper, garlic and onion, chopped mushrooms and cornstarch -  to be mixed with Ground Pork.
  • Egg
  • Strips of bacon

AMW Cooks: Stuffed Egg with Pork

Recipe Day!
The recipe I will share is dedicated to my mom!  Whenever she cooks this dish way back when I was really young, gives me the happiness I can't explain!  A very simple food yet it warms the tummy and heart!

In return, cooking this makes Mr. AMW the happiest man alive!  #hehehe  The moment he got home, he saw this dish on the table and smiled: "I think that is not enough!" #hahaha

AMW Cooks: BBQ'd Pork ala Racks

I feel so bad I missed the Racks "Best Ribs in Town" event because of my "no yaya for more than a month".  Yes!  Great news, I finally found one!  Still praying she is going to be a good one! 

So back to my story, I can't seem to leave home and I don't mind staying with my li'l active Kyle!  If you follow me on Instagram, I don't post as much food photos that I cook because I just don't have the time!  But when my mom-in-law was available to help me look out for Kyle even for a couple of hours or minutes!  I can't help but rush into the kitchen to prepare a simple dish!  Yes, I love cooking and I actually missed it a lot!

Thanks to ARC PR friends for sending me 2 bottles of Rack's famous Barbeque Sauce, one in Original and another one in HOT!  It was a perfect timing as having a good BBQ sauce in the kitchen can help save a family of hungry tummies looking for home-cooked meals!  

You can do this on a Pork or chicken and I actually just did a chicken version over the weekend!


Ingredients:
  • Garlic
  • Pepper and Salt
  • Racks Original BBQ Sauce or any BBQ marinade
  • Pork (Lomo, Liempo or Butterfly) whatever you have in the kitchen

AMW Cooks: Lumpiang Shanghai

Remember my "Triangular-shaped Lumpia" post a couple of months ago? (Read recipe HERE).  Well, I have actually made regularly shaped lumpia so many times I actually forgot to post my recipe here!  If you're interested, feel free to read my version!  It is VERY similar to the way I cooked Triangular ones!

To my international readers, Lumpiang Shanghai is also known as Fried Spring Rolls!  They are usually made with ground pork and you may add shrimps or other vegetables for more flavors!  I want to apologize in advance if you are a seafood lover because I won't be posting much seafood recipes because, unfortunately, I'm allergic to it!  :)

Did you know that the first dish I cooked for our Home Education class is Fried Shrimp Rolls?  I vaguely remembered leaving some for Mr. AMW!  Must be the reason why he fell in love with me *yeeeheee* :P

So anyways, back to the recipe!  I apologize for the "no presentation" set-up!  When it comes to fried dishes, I usually serve them on a strainer to prevent the Lumpia to turn soggy!  Trust me, this trick works!  Even after 30 minutes (I usually wait for Mr. AMW to arrive home from work), my Lumpiang Shanghai remain oh-so-crunchy!


Ingredients:
  • Ground Pork
  • Lumpia Wrapper
  • Finely chopped garlic.
  • Finely chopped carrots
  • Soy sauce
  • Cornstarch
  • Salt and Pepper
  • Turnip (optional) for added crunch.
  • a tiny amount of Knorr Seasoning (optional)
  • Oil
