Crunchy and Creamy Macaroni Salad Recipe

I seldom make Macaroni Salad as my mom makes the best one I don't want to try!

My mom's macaroni salad is creamy with an added "crunch" to it.  I know she used several key ingredients to create the crunch but obviously, I'm making excuse not to make one until today.

I finally made my Crunchy and Creamy Macaroni Salad and I earned a thumbs up from my momma!  Yes I made her this Christmas because I want to spoil her and dad!

Ingredients:

• Elbow Mcaroni
• Lady's Choice Mayonnaise
• Chopped carrots
• Chopped Onions
• Pineapple chunks
• Pickles
• Shredded chicken

I prepare the chicken first, the water used to boil the chicken was used as a Hotpot soup so all is well!

Kyle's Healthier Baon!

When Kyle started school around June, my main concern is to be able to leave him inside the classroom without screaming his head out.  It took around 2 months for him to settle down and get used to going in and out of school, it took him almost that same amount of time to finally kiss me and say "Bye Mommy" without tears rolling down his cute cheeks.

He is indeed a growing boy now.

As a mom, the "concerns" never end!  Now, I have another challenge to tackle, making sure he eats healthily in school!  For the first few months, it was cute when he snacks on potato chips, crackers...

Whenever we go out to eat at a "sandwich place", Mr. AMW's default order will always be Roast Beef Sandwich!  It is his ultimate favorite type of sandwich that I swore to myself I'll make one for him when I get the chance!

AskMeMom: Kyle's Baon!

When Kyle started preschool, I have so many issues I have to deal with!

1. Parking space at his preschool.
2. What to do as I wait for him under the sun without good internet signal.  (3 full hours)
3. The snack that I need to prepare for him on a daily basis.  (Di na pwede yung cookies ng cookies sawa na din si Kyle!)

I know I know, these aren't even issues to begin with but if you're a first-time mom, you just to make sure everything is smooth-flowing for your kid! Imagine the excitement when I recently got Lady's Choice sandwich spread in Roast Beef  and Chicken BBQ !  The 2 new variants inspired me to do this!

As you all know, one of the bonding moments I do with Kyle Nash is to have him sit beside me whenever I prepare his food!  I want him to be part of everything I do --- a bonding moment na din between us!

Truth be told, it is a first for him to try both spread, he didn't like it at first but after seeing me and his dad devour both sandwiches, he finally went ahead and had his first real bite!  So far, it was a success!  He liked it!
